Apparently from the comments on FB, my recent phone calls and texts and pretty much all conversations I’ve had with pretty much anyone since my last post, I am not alone in my disappointment this holiday season. Everyone seems out of sorts. Almost no one has it together this Christmas. I’m not special.
I can’t decide how I feel about that because I like being special and I wish everyone was having a joyous time this holiday season, but I also like that it’s not just me. Proof that maybe I’m not totally crazy.
I did manage to buy almost all of my gifts this weekend, watched my kids perform in the first of 4 musical concerts (1st handbell performance – check), and we did all that stuff I said we were going to last week.
Honestly, that night didn’t go as well as I had hoped because even though my family initially sounded excited about it, there was still a lot of fussing and snapping (not by me this time!). I kept reminding them over and over we were going to be happy and celebratory, and eventually they all came around. I’ve checked puzzle, The Grinch and egg nog off the list now.
As you can see I’m really enjoying it all because I’m checking it off of some imaginary list. Isn’t that how everyone enjoys things? (I’m using sarcasm font here, but you just can’t see it.) I’m still feeling half hearted and rushed, and apparently I’m not alone.
Anyway, I thought I’d post links to some of the yummy crock meals I’ve made the last few days while I’ve been in a rush that have been just heaven to come home to. They are not disappointing at all.
This is what we ate tonight, Irish Beef and Stout Stew. It’s from Martha so there shouldn’t be much doubt that it’s yummy. However, sometimes her stuff can be complicated. Fear not. it’s a cinch. I added carrots. I also cooked mine in my Ninja 3-in-1 cooking system so it took a little less time. I love that sucker!
This is one of our favorites, Crock Pot Chicken Chili. We serve it with Fritos like they do on the blog Our Little World. Gina serves hers with cilantro on rice. The Fritos way is less skinny, but tastes way better.
All of these are excellent on cold winter nights when you need a little comfort, and will leave you satisfied even on the days you’re just checking things off the list.
